Preheat your oven to 200°C / 180°C Fan. Place the halved tomatoes, onion quarters, and garlic cloves on a large baking tray. Drizzle with the olive oil and toss to coat. Roast for 30–35 minutes until the tomatoes are slightly charred and softened.
